Easy Protein Balls recipe

I've been making these super nutritious, gluten free and vegan protein balls (inspired by the blogger Lydia Millen) for a few months now and constantly get asked for the recipe whenever I post them on my Instagram stories. They really are so easy to make and don't take long at all. I usually make these about once a week, on Sunday afternoons for the week ahead; they're a great snack for my little ones and I love having a couple of these after a workout or in the morning whilst doing the school run.


200g medjool dates

150g ground almonds

2 tbsp crunchy peanut butter

2 tbsp chia seeds

1 tbsp flax seeds

40ml coconut oil

2 tbsp desiccated coconut

Throw all the ingredients, except the peanut butter and the coconut oil, into a food processor and blitz until you get a fine consistency. Add the peanut butter and coconut oil, mix well by hand and roll into small/medium balls (I make small ones for my daughters and bigger balls for us adults). Pop them in an airtight container and keep them in the fridge for up to two weeks.
