Mozzarella, Quinoa and Courgette Stuffed Peppers Recipe- AD
One of my go to lunches lately has been delicious stuffed peppers- it may seem like a time consuming meal but they're super easy and quick to make. I'm working in partnership with Ciao Gusto who have an Italian deli at Ocado- at this deli you can shop ingredients from 30 of Italy's most popular brands and this is the perfect opportunity to showcase one of my favourite recipes using Ciao Gusto's delicious, authentic Italian ingredients.
For this particular recipe, the combination of the melted Mozzarella, the buttery courgette and slightly caramelised tomatoes works really well together and make for a healthy and colourful lunch that even your kids might be tempted by.
3 red peppers, halved
1 courgette, finely diced
110g quinoa, cooked
1 heirloom tomato, diced
Ciao Gusto's fresh mozzarella cherries 125g
3 tbsp fresh basil leaves, chopped
1) Brush the peppers with olive oil. Place on a baking tray, cut side down and grill under a medium high heat for 15 minutes. Turn peppers and grill for another 5 minutes.
2) Melt the butter in a medium pan and fry the courgette until golden. Add the cooked quinoa, stir in the diced tomato and the chopped basil- use this mixture to fill the peppers. Top the peppers with the sliced mozzarella for 2-3 minutes until the mozzarella has melted.
